CLASSIC RISOTTO

YOU NEED:
  • 2 tablespoons butter or olive oil
  • 1/2 medium yellow onion
  • 1/2 celery stalk
  • 1/2 cup arborio rice
  • 1 cup low sodium chicken or vegetable broth, divided
  • 1 cup water, divided
  • 1 tablespoon Spice Heist Crosstown Steak Rub
  • Salt and pepper to taste
HOW TO:
  1. Melt butter in a medium sauce pan. Add onions and celery and cook on a medium low heat for 5 minutes.
  2. Add rice and cook for another 5 minutes or until rice begins to brown. Stir continuously to prevent burning.
  3. Meanwhile, in a small sauce pot, bring broth and water to a low simmer with Spice Heist Crosstown Seasoning.
  4. Begin adding broth a little at a time. Poor in just enough to cover the rice.
  5. Stir until all liquid evaporates.
  6. Repeat until rice is tender, about 20 minutes. If you run out of broth before rice is cooked simply add warmed water and continue the process until rice is tender.
  7. Salt and pepper to taste.
Taking the time to add liquid slowly in this way will make your rice creamy without the need of cheese or milk.
