YOU NEED:
- 2 tablespoons butter or olive oil
- 1/2 medium yellow onion
- 1/2 celery stalk
- 1/2 cup arborio rice
- 1 cup low sodium chicken or vegetable broth, divided
- 1 cup water, divided
- 1 tablespoon Spice Heist Crosstown Steak Rub
- Salt and pepper to taste
HOW TO:
- Melt butter in a medium sauce pan. Add onions and celery and cook on a medium low heat for 5 minutes.
- Add rice and cook for another 5 minutes or until rice begins to brown. Stir continuously to prevent burning.
- Meanwhile, in a small sauce pot, bring broth and water to a low simmer with Spice Heist Crosstown Seasoning.
- Begin adding broth a little at a time. Poor in just enough to cover the rice.
- Stir until all liquid evaporates.
- Repeat until rice is tender, about 20 minutes. If you run out of broth before rice is cooked simply add warmed water and continue the process until rice is tender.
- Salt and pepper to taste.
Taking the time to add liquid slowly in this way will make your rice creamy without the need of cheese or milk.
